Hot Fudge Pudding Cake yummy

There must be something wrong with me,lol. So far this is going to be the hottest day of the year and I decide to bake something.
I am so hungry for something chocolate, something yummy and gooey. I was browsing through an old "Taste of Home" magazine and ran across this recipe, I just had to get up and make it right then.

1 cup flour
1 cup sugar divided
3 T plus 1/4 cup cocoa, divided
2 t baking powder
1/4 t salt
1/2 cup fat free milk
1/3 cup prune baby food
(No baby around here so I sauteed few dried prunes)
1 1/2 t vanilla
1/4 cup plus 2 T packed brown sugar
1 1/4 cup boiling water

1.In a large bowl combine flour, 3/4 cup sugar, 3 T cocoa, baking powder & salt
In another bowl combine milk, prunes, & vanilla.
Stir into dry ingredients just until moistened.
Spread into a 8" baking dish sprayed with cooking spray.
2. Combine brown sugar, with remaining sugar& cocoa; sprinkle over the batter.
Carefully pour water over the top (do not stir).
bake at 350 for 28-32 minutes or until top is set and pulls away from side of dish. Serve warm.

1 serving = 196 calories, great for such a yummy dish.

Happy Quilting!

  1. I used to make double batches of that for my family....served warm with vanilla ice cream. You commented on my blog wondering about quilt shops. I can give you lists and lists! My favorite right now it Holly Hilly quilts in Willamette by West Linn. Quilting Delights is on Sunnyside Road in Clackamas. Pioneer Quilts is by Clackamas Town Center on the other side of the freeway (next to Office Depot.) The Pine Needle is in Lake Oswego. Greenbaum's Quilted Forest is in Salem. There are so many more. If you go to the Sew Oregon web site there is a list of some of the shops around the state. Happy Quilting!

  2. Hello again! I used to read your blog often and really liked it. Glad you are back! I tried this cake today despite the awful heat...my soul cried out for chocolate...it was yummy! Thanks!

  3. What a yummy-sounding recipe! My version of that recipe is cooked in the microwave not the conventional oven. Somewhere, I also have a similar recipe, but it's not chocolate (a good thing for me as I'm [unfortunately] allergic to chocolate).

Love your pics of quilts, btw.
