Comfort food and I'm a winner

Yesterday our weather turned cold, it seemed like to perfect day to put on a pot of pinto beans, (wish you were here Sandra) fried potatoes,
and corn bread.
I live alone so I will be having left overs for a few days, then maybe enough to sick some in freezer.
But as Martha says "that is a good thing".





And for dessert nice healthy,Oatmeal-Fruit Muffins. This recipe is from the "Heart Insight" magazine I get and is 0 cholesterol, 126 calories each.

Oatmeal-Fruit Muffins

1 cup flour
3/4 cup old fashion or quick cooking oatmeal
1/3 cup toasted wheat germ * I used flax seed instead
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/8 teaspon salt
3/4 cup fat free milk1/2 cup brown sugar
1/4 cup egg subsitute
1/4 cup unsweetened applesauce
1/2 cup snipped dried fruit, * I used dried plums

Preheat oven to 400
Lightly spray a 12 cup muffin tin or use paper liners.
In a medium bowl, stir the dry ingredents together.
Make a well in the center.
In another bowl mis the remaining ingredents together, except the dried fruit.
Stir into the well just until moistened.
The batter should be lumpy, Fold in the dried fruit.
Bake for 10 to 12 minutes, cool for 5 minutes.

And I'm a winner!

    Even if they would, mine would never be as good as yours!
